Hardwood flooring can last for decades if not centuries with the right upkeep. An underlayment adds another 1 4 inch to 1 2 inch to the total flooring thickness. This will help take care of minor scratches that may occur during the rest of the kitchen construction. If you are installing click lock vinyl plank flooring you should not install under cabinets. I would recommend setting all the base cabs unattached just clamped together then draw a line on the floor around them and remove the flooring giving yourself a good 1 4 inch clearance margin.

It would be a shame for you or the future owner to want to change the kitchen footprint and need to replace all of the flooring in the areas where you did not install it.
